Colorful and Yummy Cupcakes for Christmas
I love the Christmas atmosphere. Christmas lights and decorations look enchanting everywhere. As the Christmas holidays are approaching, my daughter’s class held a fun-filled holiday tradition called ‘Secret Santa’, where a student is randomly assigned to another student to whom he/she gives a gift anonymously. It’s really a lot of fun to guess who your Secret Santa is! And they’re going to get these gifts and start guessing about their secret Santa on the day of the Christmas party, which is today. For this particular Christmas party, I volunteered to send some cupcakes! 

After the successful beginning of my cupcake spree, I became confident about my baking skills and agreed to send some cupcakes. So here they are! I had to make cupcakes that would be enough for 30 kids. So I doubled the recipe and got 32 cupcakes. I took the basic cupcake recipe from here and didn’t make many changes to it. 


Ingredients: (makes 16 cupcakes)
  • 3 cups All Purpose Flour
  • 2 ½ tsp Baking Powder
  • ½ tsp Salt
  • 1 ¾ Sugar
  • 2/3 cup Butter
  • 2 Eggs
  • 1 ½ tsp Vanilla Extract
  • 1 ¼ cups Milk

Preparation:
  1. Sift together flour, baking powder and salt. Keep aside.
  2. Beat together sugar and butter until light and fluffy. 
  3. Add eggs and vanilla to the sugar mixture and beat until well mixed.
  4. Add the sugar mixture to the flour mixture along with milk and beat well.
  5. Line up the cupcake/muffin tray with paper cups and pour batter in each cup. Fill the cup only up to ¾ level of the cup as the cupcakes raise well during cooking.
  6. Preheat oven at 350 degrees. Place the muffin tray inside the oven and bake for about 25 minutes or until a toothpick comes out clean when inserted in the cupcake.
  7. When the cupcakes become cool, decorate with desired frosting or icing. My daughter helped me with the icing just like she did before with pumpkin cupcakes.
  8. Enjoy!
