Onion Pakoda baked for goodness

I’ve been thinking about baking pakodas instead of deep frying for several months now. But I couldn’t dare enough to try it. Finally I made these by crossing my fingers, but am surprised to see that these taste almost the same as deep-fried pakodas. I would definitely say these make a perfect snack for fat-conscious people. Try making these and let me know if you liked it or not! And the good thing is that it took only 20 minutes for me to bake these pakodas. The quantity I have given is good for two servings.

Updated to add: I have to clarify one thing here. The red specks you see in the pakodas are not any tomatoes or red bell pepper! Those are just the regular green chilies turned into red color due to prolonged storage or some other reason. Sorry about the confusion friends! Thank you Divya for pointing out this.

  • 1 cup Chickpea Flour (Besan) (శనగ పిండి)
  • 1 small Onion, chopped fine
  • Some Cilantro leaves, finely chopped
  • 2 small green Chilies, chopped fine
  • ¾ tsp Baking Powder(can be replaced with 1/4 tsp Baking Soda)
  • 2 tbsp Butter, melted (can be replaced with 1 or 2 tbsp Olive Oil)
  • Salt as required


  1. Mix together besan + onion + cilantro + green chilies + baking powder + butter + salt to make a thick batter. Add little water if needed. Keep aside.
  2. Line a cookie sheet with aluminum foil. Take small portions of the pakoda batter and arrange them on the cookie sheet in a manner that they won’t touch each other just like in the picture.
  3. Preheat the oven at 400 F. Then place the cookie sheet and bake for 20 minutes or until the pakodas turn golden brown in color.
  4. Ta-dah! The yummy pakodas are ready. But, be careful as the cookie sheet will be hot. Leave the sheet for some time until it gets warm enough to handle.
  5. Later transfer the pakodas to a serving plate and enjoy with ketchup or any other dip.

    One question, what are those red specks in the pakoda (tomatoes/red chillies)??? I did not see it in the ingredient list. Just wanna make sure before I make it :)

    Uma, I made them... didn't flip them halfway, but I think the flour to onions ratio was too high when I made it, so it was a little doughy instead of crispy. Will try reducing the flour next time. But it tasted good anyway :)

    Hi Uma,

    Have you tried making it with less than 2tbsp butter? Would it come out well if i used 1 tsp Olive oil instead? My in-laws are cholesterol prone hence...

    Yes, I tried it with olive oil too. They came out perfect. You can use 1 tsp oil and substitute baking powder with 1/4 tsp baking soda for 1 cup Besan. Pakodas will come out crunchy and yummy :) Hope this helps.

    Hi Uma. i have been trying to make these as part of healthy pak fast-food concept we're trying here for a new business, and we keep getting mixed results with the pakoreh :(

    Normally they turn out a bit soft, or dry/doughy. can you give advice how we can improve our recipe?

    we are serving healthy chapati rolls as our main, and thought thin/crispy baked pakora would great as a side, the 'fries' in the takeaway meal if you will.

    Also any suggestions on how to batch make these if we need eg 500 for big events?! grateful for any help :)

    Thanks for visiting my blog. I am sorry to hear that you weren't able to get good baked pakodas. I made these several times and every time I got them perfect. Of course, they won't taste like deep fried ones, but still they tasted great.

    Try replacing baking powder with 1/4 tsp of baking soda for 1 cup besan, it gives the pakodas a very crunchy texture. You may also replace butter with equal amount of olive oil. I tried this too and got crunchy and yummy pakodas.

    The recipe I posted is suitable for 2 persons. So you can calculate how much you have to increase the ingredients for 500.
