Garbanzo Bean Sundal (Chickpea Salad)

Garbanzo Bean Sundal (Chickpea Salad)

This is a healthy salad + snack for the evenings. I usually make this during festivals too as an offering. 


Ingredients:
  • 2 cups Garbanzo Beans (Chickpeas, Mudi Senagalu)
  • ¼ cup shredded Coconut (fresh or dry)
  • 1 small onion,finely chopped
  • 2 green Chilies cut lengthwise
  • Few Curry Leaves
  • A pinch of Turmeric Powder
  • 1 tsp Oil
  • ½ tsp Mustard Seeds
  • ¼ tsp Cumin Seeds
  • ½ tsp Bengal Gram
  • ½ tsp Black Gram
  • 2 dry Red Chilies
  • Salt
Preparation: 
  1. Wash and soak garbanzo beans overnight.  Then pressure-cook the dal for 3 whistles.
  2. Heat oil in a pan and add mustard seeds. 
  3. When they pop, add cumin seeds + Bengal gram + black gram and sauté well until the dals turn golden brown in color.
  4. Then add red chilies + curry leaves + onions + green chilies and sauté well until onions become tender. 
  5. Then add the cooked garbanzo beans + turmeric + salt, mix well and allow cooking for some time.
  6. Finally add coconut, mix well and keep the pan on low flame for 2 minutes and turn off the flame.
  7. This is a perfect healthy snack for the evenings.

Just grab some easily available stuff (only food stuffJ) from the pantry and prepare some yummy and easy chat item. No oil, no sweat and yes less work! Did I mention guilt-free too?

I recently prepared a simple chat item with beaten rice/poha/atukulu that became ready within 10 minutes and tasted so delicious too. Of course, many of you already make such kind of chats at home but checkout my version.

Yummy Low Fat Snack - Green Peas Chat

Peace, peace, peace! OK not really that. Even though we need a lot of Peace at present times, right now I really meant Peas :) Do you use green peas regularly in your cooking? I do, but not in daily recipes. I use them liberally in upmas, rice dishes, and salads and sometimes even in milkshakes (yes). Recently I saw a burfi (sweet dish) recipe on TV using green peas. It looked delicious and interesting and I am looking forward to make it whenever possible.

As we all know green peas are so healthy and contain so many health benefits. They are rich in antioxidants and are good for heart. Green peas help in prevention of stomach cancer and blood sugar.

Soy Pakoda – Baked Version

In my previous post I wrote about deep-fried Soy Pakoda that tasted super good. I wanted to make them healthier by baking to minimize the usage of oil. And I succeeded and the baked pakodas tasted as delicious as deep-fried pakodas. 


I used the same ingredients as I used for the deep-fried version. Only thing I changed is the amount of oil used. Here is the recipe for this guilt-free snack.

Ingredients:
  • 1 cup Soy Flour
  • 2 tsp Rice Flour
  • A pinch of Baking Soda
  • A small onion, chopped lengthwise
  • Few Green Chilies, chopped fine
  • Few Curry Leaves
  • Salt as required
  • 2 tbsp Oil  
Preparation:

Mix all the above ingredients into a thick batter by adding very little water (just sprinkle some water). Keep aside.

Preheat the oven to 350F.

Meanwhile, line a cookie tray with aluminum foil. Take small portions of the batter and place on the tray in a way that the pakodas won’t touch each other (just like in the picture).


Place this tray in the bottom rack of the oven and bake for 20 minutes or until the pakodas turn golden brown in color (for me it took 20 minutes). No need to turn them over in the middle. 


Then take out from the oven and leave aside to cool down.

Enjoy these guilt-free and yummy pakodas any time of the day.

This is just like any other vadas, but in this we use all the lentils in equal proportions. We usually make these during festivals and mostly deep-fry them. But I made these in appam pan to reduce the oil intake. They tasted equally delicious like the deep-fried ones.

These are some yummy fritters I tried recently on one evening. They are instant (no grinding as I used canned chickpeas) and are ready in minutes. And the good thing is they aren’t deep-fried. Inspired by them, her and her I made these using the appam pan and it was a success. It took very little oil and turned out perfectly yummy.

I’ve been thinking about baking pakodas instead of deep frying for several months now. But I couldn’t dare enough to try it. Finally I made these by crossing my fingers, but am surprised to see that these taste almost the same as deep-fried pakodas. I would definitely say these make a perfect snack for fat-conscious people. Try making these and let me know if you liked it or not! And the good thing is that it took only 20 minutes for me to bake these pakodas. The quantity I have given is good for two servings.

Corn Chat

Corn Chat

Here is a quick snack which is healthy and filling, during those lazy weekends. I used two cans of cooked corn kernels (by discarding the liquid inside) for my chat recipe as it requires less work and will be ready in a jiffy. If you are using fresh corn on cob, make sure to boil those before removing the kernels.

Some useful tips in choosing good corn and various methods of cooking it can be found at this website – Learn about Corn. I found this by accident, and thought it is so useful to learn about corn.

Ingredients:

  • 2 cups of Corn Kernels, cooked
  • 1 small Onion, cut into fine pieces
  • 1 small Tomato, cut into fine pieces
  • A handful of Cilantro, chopped fine
  • ½ tsp Chat Masala (Optional)
  • ½ tsp red Chili Powder
  • ½ tsp Lemon Juice
  • Salt as required

Method:

In a bowl, mix all the above ingredients, leave it for 5 minutes and enjoy as an evening snack or any time of the day whenever you feel like having a quick healthy snack.

If you wish to refrigerate the chat and eat it cold, mix all the above ingredients excluding cilantro and lemon juice and toss those in just before eating.

Corn Chat

An Update:

As corn is a low fat food with loads of vitamins (C and A mainly) and fiber, it does serve as a diet food for health-conscious people. I just realized dear Divya Vikram of Dil Se... has annouced an event called "Diet Foods". I asked her if I can send this corn chat to her healthy event and she said yes. So CORN CHAT is making its way to the above event.

Go Green!

Green is the color of nature, which happens to be my most favorite color. To my surprise, I found out that I have some green recipes (I mean green colored) with me. As they all are looking nicely green I thought of posting them all at the same time even though they were made on different dates. Believe me, they all tasted so yummy! Read on!

Let me start with a healthy and very easy snack.

Green Apple Snack


This was our snack on one evening. There is no cooking involved in this.

Green Apple Snack


We need:
  • 1 Green Apple (Granny Smith)
  • 1 tsp Red Chili Powder
  • 1 tsp Salt
Preparation:
  1. Chop the apple into thin slices. 
  2. Mix the chili powder and salt together in a separate bowl. 
  3. Arrange them on a serving plate. 
  4. Dip the apple slices in the mixture and eat. 
  5. Trust me it tastes great. That’s it.

Green Sour Dal


This dal is for the sour lovers. It has the combination of green veggies like mango and tomatillo.

Tomatillo-Mango Pappu (Green Sour Dal)


Ingredients:
  • 1 cup Toor Dal
  • 1 Green Mango (only ½ mango is needed)
  • 1 Tomatillo
  • Some Coriander Leaves
  • A pinch of Turmeric
  • Salt to taste
For Seasoning:
  • 1 tsp Mustard Seeds
  • 1 tsp Cumin Seeds
  • A pinch of Asafetida
  • 1 tsp Oil
Preparation:
  1. Wash the toor dal well and cook it until it becomes soft. Chop the mango and tomatillo into medium pieces.
  2. In a separate bowl add these pieces with some water and cook until they are soft. Then add the cooked toor dal, turmeric and salt to it.
  3. Mix well and finally add the coriander leaves. Take it away from the flame.
  4. In a small pan heat the oil and add the mustard seeds. When they splutter add the cumin and asafetida. Fry for a while and add this seasoning to the dal. Serve with hot rice.

Spinach-Potato Patties

Spinach-Potato Patties with Peanut Chutney and Ketchup

This is one easy snack and tastes great.


Ingredients:
  • A bunch of Spinach Leaves
  • 3 medium Potatoes
  • ¼ cup All-Purpose Flour
  • Salt to taste
  • Oil to deep fry
Method:
  1. Boil the potatoes, peel the skin and mash them into a smooth paste. 
  2. Cook the spinach leaves until tender, mash into a fine paste with a fork. In a bowl, mix the mashed potato and spinach well, add the flour and salt. 
  3. Mix them well and prepare just like chapathi dough.
  4. Make small balls out of the dough and flat them with palm into the shape of patties.
  5. Heat the oil in a pan. When it is hot, add these patties one by one carefully. 
  6. Fry them for some time and take them away from the oil and spread on a paper towel. Repeat this process for all the patties.
  7. Transfer them into a serving plate. Serve hot with the ketchup and peanut chutney.
