Pumpkin – Cranberry Muffins
A delicious muffin recipe for Thanksgiving

I prepared these for Thanksgiving Day and posting now after several days. I know, delayed posting!! :)

Coming to the recipe, these muffins are so easy to prepare and tasted super delicious. 



Ingredients: (Makes 12 Muffins)
  • 1 ¼ cups of All-Purpose Flour
  • ½ cup Brown Sugar (I used regular Sugar)
  • 2 tbsp Maple Syrup
  • ½ cup Oil
  • 2 Eggs
  • 1 cup Pumpkin Puree
  • ½ tsp Baking Powder
  • Pumpkin – Cranberry Muffins
  • ½ tsp Salt
  • 1 tsp Baking Soda
  • ½ tsp ground Cinnamon
  • ½ tsp ground Nutmeg
  • ½ tsp ground Allspice
  • ½ cup Apple Juice
  • ½ tsp Orange Zest
  • ½ cup fresh or frozen or dried Cranberries (I used dried ones)
Preparation:
  1. Preheat the oven to 350 F. Line a 12- cup muffin pan with paper cups. Keep aside.
  2. In a large bowl, place sugar + maple syrup + oil + eggs + pumpkin. Beat with electric mixer until well blended.
  3. In a different bowl, sift together the flour + baking powder + baking soda + salt + cinnamon + nutmeg + allspice.
  4. To the sugar and eggs mixture, add half of the flour mixture, all of the apple juice, the remaining flour mixture and the orange zest. Fold in the cranberries. Beat well with the mixer until blended.
  5. Spoon into the muffin cups up to two-thirds full.
  6. Bake in the preheated oven for 20 to 30 minutes, until a toothpick inserted in the center of the muffin comes out clean.
  7. Allow the muffins to cool in the muffin pan itself for some time before removing. Enjoy these delicious muffins warm or at room temperature.
  8. This was a super-hit at our house!!
