Have you ever used the fleshy green spears of Asparagus in your cooking? If not, you are missing the many health benefits of this succulent, delicious and tender vegetable. Look below to read some of its health benefits:

  • It’s proven to help curing many digestive problems and certain cancers.
  • Asparagus is good for the good health of heart and for controlling blood sugar.
I use this healthy vegetable often in my cooking. I previously posted a Chutney recipe with Asparagus. I sometimes add the asparagus pieces in sambar/dal items. I recently stir-fried asparagus with simple ingredients and it turned out super yummy. 

Here is the recipe:


Ingredients:

Asparagus
  • A bunch of Asparagus Spears
  • 1 tbsp grated Coconut, fresh or dry
  • A pinch of Turmeric Powder
  • ½ tsp Red Chili Powder
  • Salt

For Seasoning/Tempering:

  • 1 tsp Oil
  • ½ tsp Mustard Seeds
  • ¼ tsp Cumin Seeds
  • ½ tsp Bengal Gram (Chana Dal)
  • ½ tsp Black Gram (Urad Dal)
  • Few Curry Leaves

Preparation:

  1. Wash and remove the edges from the asparagus spears. Then chop them into small pieces. Keep aside.
  2. Heat oil in a pan and add mustard seeds. When they pop, add cumin seeds + Bengal gram + Black gram + curry leaves and sauté well.
  3. Later add the chopped asparagus along with turmeric powder and stir well. Pour some water and allow the asparagus pieces to cook and become soft.
  4. Alternatively: Place asparagus pieces in a microwave safe bowl, add little water, cover the bowl and microwave for 5-10 min until the pieces become soft and cooked.
  5. When the asparagus is cooked, add chili powder + coconut powder, mix well and add salt as required.
  6. Cook for some time and turn off the flame. Then transfer the curry to a serving bowl and enjoy with steaming hot rice. This curry goes well with chapathis too.

That looks so good, Uma. We usually stir-fry asparagus in a little butter with garlic and red chilli flakes..must try your version next time.
