Potato in Yogurt (Potato Perugu Pachadi)

Ingredients:

  • 1 Big Potato or 2 small Potatoes
  • 1 cup Plain Yogurt
  • 1 small Onion, chopped fine
  • 2 Green Chilies, chopped fine
  • A small piece of Ginger, peeled and chopped fine
  • A pinch of Turmeric
  • Few Curry leaves
  • 1 tsp Oil
Preparation:
  1. Wash and boil potatoes until cooked. Peel the skin of potatoes, mash well and keep aside.
  2. Heat oil in a pan, add onion + green chilies + ginger + curry leaves + turmeric and sauté well until cooked.
  3. Later add mashed potato along with yogurt and mix well. 
  4. Add salt as needed, mix well again and turn the flame off.
  5. That’s all. Delicious potato perugu pachadi is ready to be eaten. 
  6. Transfer the pachadi to a serving bowl and enjoy with rice or chapathis.
