Dhokla

Dhokla

This is another guest post from my cousin Soujanya. I previously posted one other yummy sweet recipe (7-cup Sweet) by her.


Here is the recipe in her words:


Ingredients:
Batter:
  • 1 cup Sooji (Semolina, ఉప్మా రవ్వ)
  • 1 tsp Besan (Chickpea Flour, శనగపిండి)
  • ½ tsp Turmeric powder
  • Salt to taste
  • Lemon juice (1 tsp, more it you like it little sour)
  • Baking Soda or Eno ½ tsp
  • 1 Tbsp Yogurt
Seasoning:
  • Oil
  • Mustard seeds
  • Cumin seeds
  • Sesame seeds
  • Finely cut green chillies
  • Cut Coriander Leaves (Cilantro, కొత్తిమీర) 
  • Dry Coconut flakes
Preparation:
  1. Mix all the ingredients with little water. The batter should have the consistency of idli batter. 
  2. Pour it into greased pressure cooker container and steam it without the whistle, just like idli for 15 minutes.
  3. For preparing the seasoning, take oil in a pan, add mustard seeds. After they splutter, add all the other ingredients. Keep it aside.
  4. After the cooker cools down, take out the container with dhokla and run a knife around the inside of it and overturn it on to a plate. 
  5. Cut them into pieces and pour the seasoning on top and enjoy!
