Sometimes our dinner consists of a healthy salad with a sandwich. This is one such salad we prepared last week. It is full of deliciousness and health. We just mix and match ingredients. Try it and you will definitely like it.
Here is the recipe:
Assorted tomatoes (I used cherry tomatoes), cut into half or whole
A can of Chickpeas, drained and rinsed
A handful of Corn
Lettuce leaves, chopped
Herbed croutons, fat free
Mixed nuts (like walnuts, cashews, almonds etc.)
Black pepper powder
Ranch/Mayonnaise/ Thousand Island Sauce
mix them all in a bowl. Sprinkle black pepper.
