OK. I will tell you! Yesterday we visited a place called “Mystery Spot” in Santa Cruz, CA. It was awesome.  We were taken to a special cabin where the strange effects happened. There was a friendly guide who was making funny jokes showed us some tricks like balls rolling uphill and water flowing up the spout. We were like standing around in impossible angles defying gravity. I felt like I was riding a roller coaster and it was fun to lose control for some time, but not for long. Totally it was so fun.

No, I am not bragging, those were the words of my little one (a second grader). One day she was writing something seriously and I peeked and found this note. I was so surprised and felt happy. Thought of sharing this with you :)

OK. Coming to today’s recipe, I recently tried pakodas with brown rice and they turned out so delicious. I shared these pakodas with some of our friends and they all liked them. I tried many recipes with brown rice and posted before. I felt so happy that brown rice pakodas came out well and are a healthy way to eat pakodas. I deep fried the pakoda this time and am planning to bake them soon to see how they taste when baked.

Brown Rice – Wheat Dosa

Brown Rice – Wheat Dosa

This is a very simple, yummy and instant dosa variety with brown rice. 

I previously posted 4 other versions of brown rice dosas. These dosa recipes can be found at the following links.
Let’s see today’s recipe:


Ingredients:
  • 2 cups Brown Rice
  • 1 cup Whole Wheat Flour
  • 1 tsp Cumin Seeds
  • Some Chili Powder for spiciness (I didn’t add though)
  • Salt
  • Oil to pour around dosas (optional)
Preparation:
  1. Dry roast brown rice in a pan until it turns golden brown in color. Keep aside for some time until it becomes little cold.
  2. Then add this rice to a blender and grind into a fine powder (a little coarse texture is OK). 
  3. Mix powdered brown rice with wheat flour + cumin seeds. Add salt and some water and mix well to make a smooth batter. The batter should be thin so that it can be poured easily on the pan.
  4. Heat a non-stick pan and pour a ladleful of dosa batter along the edge in a circular fashion. Then quickly fill in the circle with some more batter to make a big circular dosa. 
  5. Pour oil around the dosa if desired and allow it to cook for some time. Loosen the edges of dosa with a spatula and flip the dosa to allow cooking on the other side. 
  6. When dosa is done, remove it from the pan and place on a serving plate. Repeat the same process for as many dosas as you want. 
  7. Enjoy these healthy and yummy dosas with desired chutney. 
  8. Keep in mind that any dosas taste so better when hot.

Brown Rice Undrallu – Vinayaka Chavithi Special

As we all know, undrallu and kudumulu are the most favorite treats for Lord Vinayaka. I always make these treats for every Vinayaka Chavithi day. I usually make undrallu with white rice, but this time I wanted to make these using brown rice and they were as delicious as the white rice undrallu. 


Ingredients:
  • 1 cup Brown Rice
  • ¼ cup Bengal Gram (పచ్చి సెనగపప్పు, Chana Dal)
  • ½ tsp Cumin Seeds
  • 2 cups Water
  • 1 tsp Ghee
  • Salt

Preparation:

Wash and soak brown rice for an hour. Then spread it loosely on a newspaper until it dries. Then grind it without adding any water until it attains coarse texture (like Rava). Keep aside.

Wash and soak chana dal for about 30 minutes. 

Later heat ghee in a pan, add cumin seeds and chana dal and sauté well for a little time. 


Now pour water, add salt and bring it to a boil. Then add the ground rice slowly and stir well so that no lumps are formed. 

When all the water is absorbed and the contents become thick just like upma, turn off the flame and allow the contents to cool down a bit.

Finally take small batches of the mixture and form into balls of any size. Now great tasting undrallu are ready!!
Offer these yummy and healthy undrallu to Lord Vinayaka and make him happy :)

Brown Rice Rava Upma


This is a healthier version of upma made with brown rice. Here is how I prepared Rava with brown rice.

Wash brown rice well, drain all the water. Spread some newspapers on a flat surface, pour the well drained rice, spread loosely and allow the rice to dry well. It might take a day for this process. 

When the rice becomes completely dry, make it into a rough (flaky) powder (rava texture) with the help of a blender. Don’t make it too soft. That’s all! Brown Rice Rava is ready to use.

It might seem a lengthy process, but trust me it is not all a heavy work.

Now here is the recipe for Upma:

Ingredients:
  • 1 cup Brown Rice Rava
  • ¼ cup Green Peas (Fresh or Frozen)
  • 3 cups Water
  • 1 small Onion, chopped lengthwise
  • 1 or 2 Tomatoes, chopped
  • 3 or 4 green Chilies, chopped
  • Salt
For Seasoning/Tempering:
  • 1 tbsp Oil
  • ½ tsp Mustard Seeds
  • ¼ tsp Cumin seeds
  • ½ tsp Bengal Gram (పచ్చి శెనగపప్పు, Chana Dal)
  • ½ tsp Black Gram (మినప్పప్పు, Urad Dal)
  • Few Curry Leaves
  • 1or 2 dry Red Chilies, broken


Preparation:

Heat oil in a pan and add mustard seeds. When they pop, add cumin seeds + Bengal gram + black gram and sauté well. 

Then add red chilies + curry leaves + onions + tomatoes + green chilies + green peas. Sauté well and pour water. Add salt as required and mix well. Allow the water to boil and the contents cook well.

Meanwhile, in a different pan dry roast rava well till it turns light brown in color. Add this to the boiling water, stir well.

Leave the pan on medium flame for some time until all the water is absorbed and the contents are well cooked. 

Finally turn off the flame and transfer the steaming hot and delicious upma to a serving bowl.

Enjoy the healthy and yummy upma with desired chutney or sambar.

Brown Rice – Quinoa Dosa

This is another dosa variety I recently tried and liked. My daughter who never liked any kind of dosas that much, said this dosa is super delicious and wanted more. This is a very simple recipe that doesn’t require fermenting.


Ingredients:
Brown Rice – Quinoa Dosa
  • 2 cups Brown Rice
  • 1 cup Quinoa
  • Salt to taste
  • Oil

Preparation:
  1. Wash and soak brown rice and quinoa in different bowls for about 6 to 8 hours.
  2. Later grind them together into a fine paste. Add some water to dilute it and make into batter of pouring consistency. Add salt as required and mix well. Keep aside.
  3. Note: This batter doesn’t require to be fermented. The batter can be used immediately for making dosas after you prepared it.
  4. Heat a non-stick pan. Take a ladleful of batter, drop in the center of the pan and quickly spread into a thin circle. Pour little oil around the dosa and allow cooking.
  5. Later flip it over and allow cooking on the other side too. Finally transfer to a serving plate.
  6. Repeat the same process with the remaining batter or until required amount of dosas are prepared.
  7. Enjoy these delicious and healthy dosas with desired chutney.

Brown Rice Laddu

Here is another variety where you can sneak in brown rice for anyone who doesn’t like to eat brown rice. As this a sweet item they won’t say no to it. :)


I made this for this Diwali as a healthy sweet treat and it was a hit.

Ingredients:

  • 1 cup Brown Rice
  • 1 cup grated Coconut (I used dry)
  • 1 cup Sugar
  • ½ cup Ghee
  • Few Cardamom Seeds
  • Few Cashews and Raisins
  • ¼ cup Milk, if needed (just keep on hand)

Preparation:

Heat a pan and dry roast brown rice until it becomes little puffed up. Keep aside to cool.

Then mix brown rice + sugar and powder them into a fine powder. Add coconut to this and mix well. Keep aside.

Heat a pan and melt ghee. Add raisins + cashews + cardamom and sauté well until raisins bubble up and cashews turn golden brown in color.



Pour this on top of brown rice mixture and mix well until it is blended well.

Note: At this point, if the brown rice mixture remains dry and can’t be made into balls, add milk mentioned in the ingredients and mix well.

Take small portions of the mixture and shape into round balls. Spread on a big plate and allow them to dry for some time.

Enjoy the tastiest and healthy laddu. I felt like these tasted similar to Rava Laddu.

Brown Rice Dosa – Version 2

Before going into the recipe: Check out my guest post on Be@Home website where two of my recipes were published.

Now to the recipe: As I wrote in my previous post, this is a second version of brown rice dosa where I soaked brown rice and fermented the batter. There is version 3 too, which will be coming soon in the series.


Ingredients:
  • 3 cups Brown Rice
  • 1 cup Black Gram (Minappappu, Urad Dal)
  • Salt
  • Oil
Preparation:
  1. Wash and soak rice and dal separately in plenty of water overnight or for 6 hours.
  2. Grind them into a fine paste adding water as required. As I observed, brown rice has taken a little longer time to grind than the regular white rice.
  3. Add salt to the batter and mix well. The batter should be of dropping consistency.
  4. Allow the batter to stand overnight and get fermented.
  5. When the batter is ready, mix it well and check for salt and add some water if the batter became thick.
  6. Heat a non-stick pan and pour a ladleful of batter and spread into a thin circle. Pour a little oil around the dosa and allow it to cook for some time.
  7. Then flip over the dosa and add more oil if desired and allow it to cook again.
  8. When the dosa is done, transfer it to a serving plate and enjoy the crunchy dosa with desired chutney.
  9. Repeat the same process with remaining batter.
  10. We ate our dosas with Onion Chutney and Peanut Chutney.

Brown Rice Dosa – Version 1

Brown Rice Dosa – Version 1

This is an instant dosa with no soaking or fermenting. I named it version 1 because I also tried another version of this dosa by soaking and fermenting. Both of them tasted so good and felt healthy. I will post the second version soon.


Ingredients:
  • 2 cups Brown Rice
  • 1 cup Rice Flour
  • 1 tsp red Chili Powder
  • 1 tsp Cumin Seeds
  • ¼ cup finely chopped Onion
  • ¼ cup finely chopped Mint Leaves
  • 1 cup Buttermilk
  • 3 cups Water (or as needed)
  • Salt to taste
  • Oil
Preparation:
  1. Powder brown rice and add to a mixing bowl. Add rice flour + chili powder + cumin seeds + onion + mint leaves + buttermilk and mix well to form a thin batter by adding water. Adjust salt.
  2. Heat a non-stick pan and pour a ladleful of dosa batter. Then quickly spread into a thin circle with the back of the spatula. Pour oil around it and allow cooking for a while.
  3. Then flip it over and pour more oil around the dosa and allow cooking. When dosa gets cooked remove it from the pan and place on a serving plate.
  4. Repeat the same process with remaining batter and enjoy this healthy and yummy dosa with your favorite chutney.

Soy Beans – Brown Rice Dosa

Soy Beans – Brown Rice Dosa

Presenting another healthy dosa version! This tasted so delicious like all the other dosas. We all know about the many health benefits of soya and brown rice.

Soybeans provide lots of proteins, iron, calcium, phosphorus, and dietary fiber. They are also excellent source of vitamins B1, B2, B6, and E and folic acid. It helps in reducing LDL (bad cholesterol) levels and in cancer prevention.

Brown rice is considered to be an excellent food for weight loss and lowering cholesterol. It is a rich source of fiber and many vitamins.


Ingredients:
  • 1 cup dried Soy Beans
  • 1 cup Brown Rice
  • A handful of Cilantro
  • A small Ginger piece, peeled
  • Salt
  • Oil
Preparation:
  1. Wash and soak soya beans and brown rice separately with plenty of water overnight. Grind into a thin batter (dropping consistency) along with cilantro + ginger + salt.
  2. Heat a non-stick pan and pour a ladleful of batter and quickly spread into a circle. Pour some oil around it and allow cooking for some time.
  3. Then flip it over and allow cooking on the other side too. Transfer dosa to a serving plate. Repeat the same process with the remaining batter.
  4. Enjoy this healthy and yummy dosa with desired chutney.
  5. YUMMY!
