Yummy, Eggless Fruit Cake for Christmas |
First let me talk about the big change I told you about in my
previous post. Many of you have guessed correctly!! Yes, I am going to get my own domain from the New Year. I am so happy about it. But I am still working on it and I will give you more details soon.
I’ve been thinking to bake a fruit cake for Christmas, but most of the recipes I found on the net contain rum/brandy in them. As I want kids also (of course us too) to eat it, I wanted to omit it. I know true Christmas Fruit Cake means we have to prepare it traditionally, but hey, nothing wrong in trying this simple and yummy cake too!! It tasted so delicious and I had the satisfaction that I baked some fruit cake for this Christmas.
My Notes: Original Recipe asked us to bake the cake for 75 minutes, but I baked it just for 30 minutes and it came out just perfect and yum. And I also added ¼ cup of milk to the batter as I thought it was little dry when I prepared it according to the original recipe. The cake came out soft.
But it didn’t raise that much like the usual cake. It may be because we didn’t add any eggs. Is it? Expert bakers: please enlighten me on this. :)
Ingredients:
- 2 cups All Purpose Flour
- 2 tsp Baking Powder
- 1 tsp Salt
- ¾ cup Water
- ½ cup Butter
- ½ cup white Sugar
- ½ tsp ground nutmeg
- 1 tsp Mixed Spice (I used All Spice)
- ¾ cup dried Mixed Fruit, chopped
- ½ tsp Baking Soda
- ¼ cup Milk
Preparation:

- Pour
water into a saucepan and bring to a boil. When it is boiling, add the
mixed fruits + butter + sugar + nutmeg + all spice and mix well.
- Stir
until the butter melts and the sugar melts. Keep the flame on medium
setting. Bring the fruit mixture to a boil and turn off the flame. Stir
in baking soda and keep it aside until it becomes lukewarm.
- Meanwhile, sift flour into a large bowl and add baking powder and salt. Mix well.
- Then pour the prepared fruit mixture onto the flour and also add milk. Mix well to make sure there are no lumps.
- Grease a loaf pan and pour this batter (it will be little thick). Spread evenly in the pan.
- Preheat
the oven to 375 F. Place the loaf pan on the center rack and bake for
30 minutes. Check if the tooth pick inserted in the center of the cake
comes out clean. If not, increase the time.
- Then
take out the cake and allow it to cool in the pan for 5 minutes. Then
run a knife along the edges to loosen it and turn out onto a cooling
rack to cool completely.
- Cut into pieces when the cake is completely cool and enjoy!!
- My kids loved this cake so much. It tasted great. :)

ReplyDeleteUsually christ cake contains less flour and more fruits and nuts that is why it will take long time to bake. Xmas cake never rise high or spongy!

ReplyDeleteI am certainly not an expert in cake baking. But whatever little experience I have with that I suggest you can try replacing water(3/4 cup) with soda water(1 cup) and avoid the milk altogether. I hope that should give the cake a little more rise.
