Great tasting Cranberry Pudding Cupcakes

First of all, A Very Merry Christmas To You!! Hope you guys are having a good Christmas day. As usual my kids got some presents from Santa and some from parents. I guess Christmas is the most enjoyable holiday for kids as they get lots of presents.


Coming to the recipe, today I made these Cranberry Pudding Cupcakes as a treat for the kids which turned out so delicious.

Cranberry Pudding Cupcakes

Recipe Source: All Recipes (I halved the measurements)


Ingredients: (Makes 12 Cupcakes)
  • 2 cups all-purpose Flour
  • 2 cups Cranberries, (fresh or frozen)
  • ¼ cup Butter
  • 1 cup white Sugar
  • 2 tsp Baking Powder
  • ½ tsp Salt
  • 1 ½ cups Evaporated Milk
Preparation:

  1. Add cranberries to a food processor and coarsely crush them. Keep aside.
  2. Mix flour + baking powder + salt together and keep aside.
  3. In a large bowl, add sugar + butter and beat well until light and fluffy. 
  4. Add flour mixture and evaporated milk to the sugar mixture and beat well again until well mixed. Finally stir in the cranberries.
  5. Line a muffin pan with paper cups and fill each cup with the prepared batter up to ¾ level.
  6. Preheat oven to 350 F and place the muffin pan on center rack. Bake for 30 minutes or until a toothpick inserted in the center of the cupcake comes out clean.
  7. Let the cupcakes cool completely and enjoy just the way they are or with some of your favorite icing.
  8. Yummy!!

  1. Nice cuppys. Is there a reason to bake at 325 instead of 350 F. Unless you were using dark pan.
