Cranberry Bread with Pureed Fruit

Yummy and Eggless Cranberry Bread
 
As I was planning to send something for Madhuram’s Egg Replacement event, I was browsing through different baking recipes online and in my collection. Last week when I visited the grocery shop a packet of fresh cranberries caught my attention. A recipe for cranberry bread was given at the back of that packet. So immediately took it and brought home. I have never used cranberries in my cooking, so was skeptical about using them. Anyway, went with the bread recipe to see how it would taste. Madhuram has announced “Pureed Fruit” as the substitute of egg for this month’s event, I used mashed banana in the place of egg and was wondering how it would taste! But, trust me, the bread tasted so delicious and came out perfect and was smelling great.

Cranberry Bread

I am giving the original recipe ingredients written in blue color and my modifications written in red color. If I didn’t make any modifications for a particular ingredient, I just left it as it is! Hope it’s not that confusing!


Ingredients:
Cranberry Bread
  • 2 cups All Purpose Flour (Maida)
  • 1 cup Sugar
  • 1 ½ tsp baking powder
  • 1 tsp salt
  • ½ tsp baking soda
  • ¾ cup orange juice – I used apple juice as I don’t have orange juice on hand
  • 2 tbsp vegetable oil – I used Olive Oil
  • 1 tbsp grated orange peel – I omitted this
  • 1 egg, well beaten – I used half a ripe Banana mashed with ½ tsp Baking Powder
  • 1 ½ cups fresh or frozen cranberries, coarsely chopped – I used Fresh Cranberries and crushed them using a food processor
  • ½ cup chopped nuts – I used Semi-sweet Chocolate Chips (not that I dislike nuts, but kids opted for these)

Preparation:
  1. Preheat oven to 350F.
  2. Mix together flour, sugar, baking powder, salt and baking soda in a medium mixing bowl.
  3. Stir in apple juice and mashed banana (orange juice, oil, orange peel and egg). Mix until well blended.
  4. Stir in cranberries and chocolate chips (nuts).
  5. Grease a loaf pan and spread the batter evenly in loaf pan.
  6. Bake for 55 minutes or until a toothpick inserted in the center comes out clean. 
  7. Cool on rack for 15 minutes. Remove from pan, cool completely.
  8. Enjoy the cranberry bread with a cup of coffee or just like that. 
  9. Yummy!!
