All – In – One Daal

This is a very simple but filling dal that contains all the healthy ingredients. 


Ingredients:
  • ½ cup Moong Dal (Pesara Pappu)
  • ½ cup Toor Dal (Kandi Pappu)
  • ½ cup Chana Dal (Senaga Pappu)
  • ½ cup chopped Carrot
  • ½ cup chopped Spinach
  • ¼ cup Green Peas (I used frozen Peas)
  • 1 Tomato, chopped
  • 1 Onion, chopped
  • 3 Green Chilies, chopped
  • ¼ tsp Turmeric Powder
  • A pinch of Asafetida (Hing, Inguva)
  • ½ tsp Cumin Seeds
  • ½ tsp Mustard Seeds
  • Salt
  • A small piece of Ginger, chopped
  • 1 tsp Oil

Preparation:

Combine all three dals in the ingredients and wash well. Then add turmeric powder and pressure-cook them with 3 cups of water for 3 to 4 whistles. When the pressure is gone, mash the dal well with a spatula and keep aside. 

Meanwhile, heat oil in a pan and add mustard seeds. When they pop add cumin seeds and stir well. Then add onions + tomatoes + green chilies + spinach + carrot + ginger and stir well.


To this add asafetida and mix well. Pour some water just to soak the vegetables, cover and allow the veggies to cook well and become soft. 

When the veggies are well cooked, add the dal, mix well and leave it on low flame for some time. Add salt and mix well.

Later turn the flame off and transfer the dal to a serving bowl and enjoy with rice or chapathis. Yummy!!

Brown Rice Rava Upma


This is a healthier version of upma made with brown rice. Here is how I prepared Rava with brown rice.

Wash brown rice well, drain all the water. Spread some newspapers on a flat surface, pour the well drained rice, spread loosely and allow the rice to dry well. It might take a day for this process. 

When the rice becomes completely dry, make it into a rough (flaky) powder (rava texture) with the help of a blender. Don’t make it too soft. That’s all! Brown Rice Rava is ready to use.

It might seem a lengthy process, but trust me it is not all a heavy work.

Now here is the recipe for Upma:

Ingredients:
  • 1 cup Brown Rice Rava
  • ¼ cup Green Peas (Fresh or Frozen)
  • 3 cups Water
  • 1 small Onion, chopped lengthwise
  • 1 or 2 Tomatoes, chopped
  • 3 or 4 green Chilies, chopped
  • Salt
For Seasoning/Tempering:
  • 1 tbsp Oil
  • ½ tsp Mustard Seeds
  • ¼ tsp Cumin seeds
  • ½ tsp Bengal Gram (పచ్చి శెనగపప్పు, Chana Dal)
  • ½ tsp Black Gram (మినప్పప్పు, Urad Dal)
  • Few Curry Leaves
  • 1or 2 dry Red Chilies, broken


Preparation:

Heat oil in a pan and add mustard seeds. When they pop, add cumin seeds + Bengal gram + black gram and sauté well. 

Then add red chilies + curry leaves + onions + tomatoes + green chilies + green peas. Sauté well and pour water. Add salt as required and mix well. Allow the water to boil and the contents cook well.

Meanwhile, in a different pan dry roast rava well till it turns light brown in color. Add this to the boiling water, stir well.

Leave the pan on medium flame for some time until all the water is absorbed and the contents are well cooked. 

Finally turn off the flame and transfer the steaming hot and delicious upma to a serving bowl.

Enjoy the healthy and yummy upma with desired chutney or sambar.

Moong Dal Payasam

పెసరపప్పు పాయసం

This is a delicious treat for festival days prepared with simple procedure.


Ingredients:
  • ½ cup Moong Dal (పెసరపప్పు)
  • 3 cups Milk
  • 1 cup Sugar
  • Some Cashews, Cardamom and Raisins
  • 2 tsp Ghee (నెయ్యి)


Preparation:

Cook moong dal in a pressure cooker.

Boil milk, add cooked dal + sugar and mix well.

Keep on low flame for some time. Mix well and turn off the flame.

Heat ghee in a different pan and add cashews + cardamom + raisins. Saute well and add these to the prepared payasam, stir well.

A deliciously tasting Payasam is ready!

Mint Rice

I previously posted “Mint Pulao” recipe. This is a different version of it. Mint rice is so aromatic and delicious. 


Ingredients:
  • 2 cups Basmathi Rice (I used brown Basmathi)
  • 2 cups fresh Mint Leaves
  • 5 to 6 Green Chilies, chopped
  • 1 small Onion, chopped
  • 2 small Tomatoes, chopped
  • A pinch of Turmeric Powder
  • ½ tsp Cumin Seeds
  • 1-2 tbsp Oil
  • Salt


Preparation:

Wash and soak rice for 30 minutes in plenty of water. Then add this to a rice cooker and cook until done.

Add water like 1 rice = 1 ½ cups water ratio. When rice is done, spread in a big bowl or a plate to cool down a bit.

In a pan, heat oil and add cumin seeds + onions + tomatoes + green chilies + turmeric, mix well and cook for some time.

Meantime, add the mint leaves to a blender, add little water and grind into a smooth paste. Add this paste to the cooking vegetables, stir well and leave on medium flame for some time until the vegetables become tender.

After some time turn the flame off and pour the contents to the cooked rice, add salt and mix very well by hand or a spatula.

Enjoy the delicious, aromatic mint rice with raita of your choice. We enjoyed ours with Cucumber raita.
