Eggless Banana Bread with Chocolate Chips – For a Worthy Cause

Eggless Banana Bread with Chocolate Chips

Now, don’t look at me with a puzzled face if I say I never baked bread before! Yes, true! Though I am not new to baking and baked some goodies before, I never put my hand into baking bread. But, now a great opportunity has come my way to bake my first bread for a worthy cause.

My dear friend, Rosie of Rosie Bakes a Piece of Cake, a sweet blogger, who whips up so many mouth-watering baked goodies like a pro and tempts us with stunning pictures, has tagged me to bake bread for a wonderful cause. I felt so happy to do this tag even though I am still a novice when it comes to baking bread.

BAKE BREAD – GIVE DOUGH – FEED AFRICA!

Breadline Africa is a registered charity in South Africa that is seeking to put an end to poverty in South Africa and further afield in Africa. Their aim is to break the cycle of poverty and help communities to achieve long term self-sustainability. Breadline Africa was founded in 1993 by social workers and communities in South Africa with minded colleagues in Europe, (who were well placed to source out donations). They are geared to help fund small ground level projects in Africa which are most likely to succeed with financial help.

On Blog Action Day Breadline Africa launched their Worldwide Blogger Bake-Off campaign. The aim is to raise $1 million in funds for a project to convert shipping containers into locations for food production and distribution in Africa. It is hoped that these sustainable community kitchens will not only provide food such as bread and soup to those in need, but also opportunities for skills development within poor communities.

Bloggers can download the Blogger Bake off widget and tag five other bloggers to do the same.

I would like to tag five lovely blogger friends to bake bread for this worthy cause. Please note that you can bake any kind of bread for this cause.

Now coming to the recipe:

As I am new to baking bread, I wanted to start with a simple bread recipe that involves easy work. I found an interesting bread recipe here and modified a little bit according to our taste.

Ingredients:
  • 2 cups All Purpose Flour
  • 3 ripe Bananas
  • ¼ cup Oil (I used Olive Oil)
  • 1 cup Sugar
  • 1 tsp Vanilla extract
  • 1 tsp Baking Soda
  • 1 tsp Salt
  • 1 cup Semi-sweet Chocolate Chips (Can be substituted with 1 cup of chopped Walnuts or Pecans)
Preparation:
  1. Mash the bananas into a soft paste. A fork can be used to mash it easily. Add oil, vanilla and sugar to this banana mixture. Mix well.
  2. Later sift flour + salt + soda together and add to banana mixture along with the chocolate chips.
  3. Mix until flour is blended in well, but don’t over mix it.
  4. Pour this mixture into a loaf pan and bake at 3500 F. Don’t forget to preheat the oven first.
  5. Bake the bread for 45-60 minutes or until a toothpick when pierced comes out clean.
  6. Here is how I adjusted the time: At first I baked it for 40 minutes, checked for doneness and increased 5 more minutes of baking time and again 5 more minutes which means I baked it for 50 minutes in total!
  7. Then cool the bread in the pan itself for 10 minutes and then remove from the pan to cool completely on a wire rack.
  8. Finally when it is cool enough to touch, cut as many pieces as you want, and enjoy the deliciousness.
  9. It was a great hit with my kids, not to mention my husband and myself!
